Method
 

  1. Prepare the Marinade: In a medium bowl, whisk together the apple butter, Dijon mustard, apple cider vinegar, soy sauce, garlic powder, smoked paprika, and black pepper.
  2. Marinate the Pork Chops: Place the pork chops in a resealable bag or shallow dish. Pour the apple butter mixture over the pork chops, ensuring they are evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Sear the Pork Chops: Heat the olive oil in a large skillet over medium-high heat. Remove the pork chops from the marinade, allowing any excess to drip off (reserve the marinade). Sear the pork chops for 2-3 minutes per side, until nicely browned.
  4. Bake to Perfection: Preheat oven to 375°F (190°C). Pour the reserved marinade over the pork chops in the skillet. Transfer the skillet to the preheated oven and bake for 8-12 minutes, or until the internal temperature reaches 145°F (63°C). Use a meat thermometer to ensure accuracy.
  5. Rest and Serve: Remove the skillet from the oven and let the pork chops rest for 5 minutes before serving. Garnish with fresh thyme sprigs, if desired.
