Ingredients
  

  • 1 cup long-grain rice basmati or jasmine
  • 1 3/4 cups water
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • Juice of 2 limes
  • 1/4 cup chopped fresh cilantro

Method
 

  1. Rinse the rice in a fine-mesh sieve under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat.
  3. Add the rinsed rice and toast for 2-3 minutes, stirring constantly, until the rice is fragrant and slightly translucent.
  4. Add the water and salt to the saucepan. Bring to a boil, then reduce heat to low, cover tightly, and simmer for 15 minutes. Do not lift the lid during this time.
  5. After 15 minutes, remove the saucepan from the heat and let it sit, covered, for 10 minutes.
  6. Remove the lid and fluff the rice with a fork.
  7. Gently stir in the lime juice and chopped cilantro.
  8. Taste and adjust seasoning as needed.
  9. Serve immediately and enjoy!
