- Preheat your oven to 375°F (190°C).
- Chop all your veggies and apples.
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
- Season the chicken pieces with salt, pepper, and paprika.
- Add the chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion and celery and cook until softened, about 5 minutes.
- Add the garlic and mushrooms and cook for another 3 minutes, until the mushrooms are tender.
- Stir in the diced apples and cook for 2-3 minutes, until they start to soften slightly.
- In a small bowl, whisk together the chicken broth, heavy cream, and flour until smooth.
- Pour the cream mixture into the skillet with the vegetables and apples.
- Add the thyme, sage, and nutmeg. Bring the sauce to a simmer, stirring constantly, until it thickens, about 3-5 minutes.
- Stir in the butter and Parmesan cheese (if using) until melted and smooth.
- Taste the sauce and adjust the seasoning as needed.
- Add the cooked chicken back to the skillet with the sauce, vegetables, and apples. Stir to combine.
- Pour the mixture into a greased 9x13 inch baking dish (or individual ramekins).
- Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and golden brown on top.
- Remove the casserole from the oven and let it rest for a few minutes before serving.
- Serve hot and enjoy!
Notes
Use high-quality ingredients for the best flavor. Don't overcrowd the pan when sautéing the chicken. Adjust the sweetness with maple syrup or honey if desired. Sprinkle breadcrumbs, chopped nuts, or fresh herbs on top before baking for added texture. The casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours. Crispy bacon, different apple varieties, or additional vegetables can be added. Gluten-free flour can be used as a substitute. Leftover casserole can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
