Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 medium apples such as Honeycrisp or Gala
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1/2 cup chopped celery
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter
  • 1/4 cup grated Parmesan cheese optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Chop all your veggies and apples.
  3. In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
  4. Season the chicken pieces with salt, pepper, and paprika.
  5. Add the chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the onion and celery and cook until softened, about 5 minutes.
  7. Add the garlic and mushrooms and cook for another 3 minutes, until the mushrooms are tender.
  8. Stir in the diced apples and cook for 2-3 minutes, until they start to soften slightly.
  9. In a small bowl, whisk together the chicken broth, heavy cream, and flour until smooth.
  10. Pour the cream mixture into the skillet with the vegetables and apples.
  11. Add the thyme, sage, and nutmeg. Bring the sauce to a simmer, stirring constantly, until it thickens, about 3-5 minutes.
  12. Stir in the butter and Parmesan cheese (if using) until melted and smooth.
  13. Taste the sauce and adjust the seasoning as needed.
  14. Add the cooked chicken back to the skillet with the sauce, vegetables, and apples. Stir to combine.
  15. Pour the mixture into a greased 9x13 inch baking dish (or individual ramekins).
  16. Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and golden brown on top.
  17. Remove the casserole from the oven and let it rest for a few minutes before serving.
