- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
- In a small bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Rub the mixture evenly over both sides of the chicken breasts.
- Place the seasoned chicken breasts on the prepared baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and a meat thermometer inserted into the thickest part registers 165°F (74°C).
- While the chicken is baking, prepare the hot honey glaze. In a small saucepan, combine the honey, hot sauce, apple cider vinegar, and red pepper flakes (if using).
- Heat over low heat, stirring constantly, until the glaze is smooth and slightly thinned, about 2-3 minutes. You can also microwave it in 30-second intervals, stirring in between, until it's the right consistency.
- Once the chicken is cooked, remove it from the oven.
- Generously brush the hot honey glaze over the top of each chicken breast.
- Sprinkle the crumbled feta cheese evenly over the glazed chicken.
- Return the baking sheet to the oven and bake for another 2-3 minutes, or until the feta is slightly softened and warmed through.
- Remove the Hot Honey Feta Chicken from the oven and let it rest for a couple of minutes before serving.
- Garnish with fresh parsley, if desired.
- Serve immediately with your favorite sides. Roasted vegetables, quinoa, or a simple salad are all great options.
Notes
Don't skip the meat thermometer for perfectly cooked chicken. Adjust the spice level to your preference. Feta can be substituted with goat cheese or Parmesan. You can prep the chicken and glaze ahead of time. Leftovers can be stored in the refrigerator for up to 3-4 days. For even more flavor, consider adding a pinch of cayenne pepper to the chicken rub.
