Ingredients
  

  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1/4 cup crumbled feta cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley, chopped for garnish

Method
 

  1. Prepare the Marinade: In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, red pepper flakes (if using), salt, and pepper.
  2. Marinate the Chicken: Place the chicken breasts in a zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat the Oven: Preheat oven to 400°F (200°C).
  4. Bake the Chicken: Place the marinated chicken breasts in a baking dish. Scatter the Kalamata olives and sun-dried tomatoes around the chicken.
  5. Bake: Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  6. Finish & Serve: Remove from the oven and sprinkle with crumbled feta cheese and fresh parsley. Serve immediately.

Notes

For best results, use high-quality extra virgin olive oil and fresh lemon juice. Do not over-marinate the chicken, as it can become mushy. To prevent garlic from burning, add it later in the cooking process. Use a meat thermometer to ensure the chicken is cooked to an internal temperature of 165°F (74°C). Let the chicken rest for a few minutes after cooking to allow the juices to redistribute. You can substitute dried herbs for fresh herbs, but use them sparingly as their flavor is more concentrated. You can also add other Mediterranean vegetables such as bell peppers, zucchini, or eggplant to the baking dish along with the chicken.
