Ingredients
  

  • 1 cup low-fat cottage cheese blend smooth if preferred
  • 4-5 oz cooked chicken breast shredded or cubed
  • 1/4 cup marinara sauce
  • 2 tbsp shredded mozzarella cheese
  • 1 tsp grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1/4 tsp garlic powder
  • pinch red pepper flakes optional
  • fresh basil or parsley for garnish

Method
 

  1. Place cottage cheese in a large microwave-safe bowl. For smoother texture, blend with an immersion blender for 30 seconds until creamy.
  2. Add cooked chicken, marinara sauce, Italian seasoning, and garlic powder to the bowl. Stir thoroughly until all ingredients are well combined and chicken is evenly coated.
  3. Microwave on high for 1.5 to 2 minutes. Halfway through (around 1 minute), carefully remove the bowl and stir the mixture. Return to microwave and continue heating until steaming hot throughout.
  4. Sprinkle shredded mozzarella and grated Parmesan evenly over the hot mixture. Microwave for another 30 to 45 seconds until cheese is melted and bubbly.
  5. Let sit for 30 seconds. Garnish with red pepper flakes if desired and fresh basil or parsley. Serve immediately.

Notes

Serving Options: Enjoy as-is for low-carb, or serve over zucchini noodles, whole wheat pasta, or cauliflower rice. Storage: Best enjoyed fresh. Refrigerate leftovers up to 2 days; reheat on medium power, stirring halfway through. Cottage cheese may separate slightly but will come back together when stirred. Not recommended for freezing. Variations: Use full-fat cottage cheese for creamier texture, substitute rotisserie chicken for convenience, add vegetables like spinach or mushrooms, or make vegetarian with roasted vegetables instead of chicken.
