Ingredients
  

  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon Dijon mustard
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1.5 lbs flank steak or sirloin steak, about 1 inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 12 slider buns

Method
 

  1. In a medium bowl, combine the softened butter, minced garlic, parsley, chives, thyme, lemon juice, smoked paprika, red pepper flakes, and Dijon mustard.
  2. Season with salt and pepper to taste.
  3. Mix well until all ingredients are evenly distributed.
  4. Set aside at room temperature or refrigerate until ready to use. (If refrigerating, let it soften slightly before using.)
  5. Pat the steak dry with paper towels.
  6. In a small bowl, combine garlic powder, onion powder, salt and pepper.
  7. Rub the steak with olive oil and then generously season with the garlic powder mixture on both sides.
  8. Heat a large cast iron skillet or grill pan over medium-high heat until smoking hot.
  9. Carefully place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare, or longer depending on your desired doneness. Use a meat thermometer to ensure it reaches your preferred internal temperature (130-135°F for medium-rare).
  10. Remove the steak from the skillet and place it on a cutting board.
  11. Tent loosely with foil and let it rest for at least 10 minutes.
  12. Using a sharp knife, thinly slice the steak against the grain.
  13. Slice the slider buns in half.
  14. Optional: If you're using cheese, place a slice of provolone on the bottom half of each bun.
  15. Pile the sliced steak onto the buns.
  16. Generously spread the Cowboy Butter over the steak.
  17. Top with the other half of the bun.
  18. Serve the Cowboy Butter Steak Sliders immediately.

Notes

Don't overcook the steak; use a meat thermometer. Slice the steak against the grain for tenderness. The Cowboy Butter can be made ahead of time and stored in the refrigerator. Toast the buns for extra flavor and texture. Get creative with toppings like caramelized onions, pickled jalapenos, or balsamic glaze. For a spicy kick, add more red pepper flakes or hot sauce to the butter. Experiment with different cheeses like Gruyere, Swiss, or cheddar.
