Cowboy Casserole

This family-favorite dish is a "warm hug on a plate," featuring a hearty layer of seasoned ground beef and corn, topped with gooey melted cheese and a crispy blanket of tater tots. It's a quick, 50-minute meal perfect for busy weeknights.

Total Time 50 minutes
Servings: 6 servings
Course: Casserole, Main Dish
Cuisine: American

Ingredients

  • 1 lb Ground beef (The Base)
  • 1 can Corn (15 oz, drained) (The Base)
  • 2 cups Shredded cheese (Cheddar or similar) (The Base)
  • 1 can Cream of mushroom soup (10.5 oz) (Creamy Sauce)
  • 0.5 cup Milk (Creamy Sauce)
  • 1 tsp Garlic powder (Seasoning)
  • 1 tsp Onion powder (Seasoning)
  • Salt and Pepper (To taste) (Seasoning)
  • 1 bag Frozen tater tots (32 oz) (The Topping)

Equipment

  • 9x13-inch baking dish greased
  • skillet for browning meat

Method

  1. Preheat your oven to $350^{circ}text{F}$ ($175^{circ}text{C}$) and grease a $9text{x}13text{ inch}$ baking dish. In a skillet over medium heat, cook the ground beef until no longer pink ($5text{–}7text{ minutes}$). Drain excess fat to prevent a greasy casserole.
  2. In the same skillet with the beef, stir in the cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Mix until the sauce is smooth and well combined with the meat.
  3. Beef: Spread the creamy beef mixture evenly across the bottom of the prepared baking dish. Corn & Cheese: Spread the drained corn over the beef, then sprinkle the shredded cheese evenly over the corn. Tots: Arrange the frozen tater tots in a single, even layer over the cheese.
  4. Place in the oven and bake for $30text{–}35text{ minutes}$. The casserole is ready when the tater tots are golden brown and crispy. Let the dish cool for a few minutes before serving to help the layers set.

Notes

For extra crispy tater tots, use them straight from the freezer and consider turning on the broiler for the last $2text{–}3text{ minutes}$ of cooking. You can assemble this dish ahead of time and store it in the fridge; just add $5text{–}10text{ minutes}$ to the bake time. For a vegetarian version, swap the beef for black beans or lentils.
