Ingredients
  

  • 2 cups shredded cooked chicken rotisserie works great
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup sour cream
  • 1 sleeve buttery round crackers about 30 crackers, crushed
  • 1/2 cup unsalted butter 1 stick, melted

Method
 

  1. Preheat your oven to 350°F and lightly grease a 9x13-inch baking dish with butter or cooking spray.
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, and sour cream, stirring until everything is well incorporated and the mixture looks smooth and creamy.
  3. Spread the chicken mixture into your prepared baking dish, using a spatula to smooth it into an even layer that reaches all the corners.
  4. Place the crackers in a resealable bag and crush them with a rolling pin or the bottom of a measuring cup until you have a mix of fine crumbs and some larger pieces.
  5. Transfer the crushed crackers to a medium bowl and pour the melted butter over them, stirring with a fork until all the crumbs are coated with butter.
  6. Sprinkle the buttery cracker mixture evenly over the chicken layer, distributing it all the way to the edges of the dish.
  7. Bake for 30-35 minutes, until the filling is bubbling around the edges and the cracker topping has turned golden brown.
  8. Remove from the oven and let the casserole rest for about 5 minutes before serving.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheating: Warm individual portions in microwave on medium power for 2-3 minutes or reheat whole dish covered with foil in 325°F oven for 20-25 minutes. Add splash of milk or broth if dry. Make-Ahead: Assemble casserole up to a day in advance, cover tightly with foil, and refrigerate. Add 10 extra minutes to baking time. Freezing: Prepare unbaked casserole, wrap tightly in plastic wrap and foil, freeze for up to 2 months. Thaw overnight in fridge before baking. Variations: Add shredded cheddar, Monterey Jack, or Colby Jack for extra cheese. Mix in frozen peas, corn, or broccoli for vegetables. Use cream of mushroom or cream of celery soup instead. Try crushed potato chips or French fried onions for different topping. Make vegetarian by replacing chicken with sautéed mushrooms, broccoli, or spinach. Add cayenne or jalapeños for spicy version.
