- In a large bowl, combine the cubed chicken breast with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss to coat evenly.
- Cook the chicken using one of the following methods:
- Stovetop: Heat a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, or until cooked through and lightly browned.
- Oven: Preheat your oven to 400°F (200°C). Spread the chicken in a single layer on a baking sheet. Bake for 12-15 minutes, or until cooked through.
- Air Fryer: Preheat your air fryer to 375°F (190°C). Cook the chicken in a single layer for 8-10 minutes, or until cooked through, flipping halfway through.
- Once the chicken is cooked, transfer it back to the large bowl.
- Pour in the buffalo wing sauce and ranch dressing. Toss to coat the chicken completely in that glorious sauce.
- Choose your base: Rice, quinoa, lettuce, or cauliflower rice.
- Top with the buffalo chicken.
- Add your favorite toppings: cheese, veggies, and any other extras you're craving.
- Drizzle with extra ranch dressing (optional) and enjoy!
Notes
Control the spice level by using a mild, medium, or hot buffalo wing sauce. Add a pinch of cayenne pepper for extra heat. Cook the chicken and base ahead of time for a quicker meal. Store separately in the fridge. For an extra creamy sauce, add a tablespoon of cream cheese to the buffalo sauce mixture. Consider a Mediterranean, Mexican Fiesta, or Asian-inspired twist by changing the base and toppings.
