Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 cup buffalo wing sauce e.g., Frank's RedHot
  • 1/4 cup ranch dressing, plus extra for serving
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Cooked rice white or brown
  • Blue cheese crumbles, shredded cheddar, or Monterey Jack cheese for topping
  • Diced celery, shredded carrots, sliced green onions, cherry tomatoes, or avocado for topping
  • Corn, black beans, or pickled onions for topping optional

Equipment

  • Large bowl
  • Skillet or Baking Sheet or Air Fryer
  • Measuring cups
  • Measuring spoons
  • Tongs or spatula
  • knife
  • cutting board

Method

  1. In a large bowl, combine the cubed chicken breast with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss to coat evenly.
  2. Cook the chicken using one of the following methods:
  3. Stovetop: Heat a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, or until cooked through and lightly browned.
  4. Oven: Preheat your oven to 400°F (200°C). Spread the chicken in a single layer on a baking sheet. Bake for 12-15 minutes, or until cooked through.
  5. Air Fryer: Preheat your air fryer to 375°F (190°C). Cook the chicken in a single layer for 8-10 minutes, or until cooked through, flipping halfway through.
  6. Once the chicken is cooked, transfer it back to the large bowl.
  7. Pour in the buffalo wing sauce and ranch dressing. Toss to coat the chicken completely in that glorious sauce.
  8. Choose your base: Rice, quinoa, lettuce, or cauliflower rice.
  9. Top with the buffalo chicken.
  10. Add your favorite toppings: cheese, veggies, and any other extras you're craving.
  11. Drizzle with extra ranch dressing (optional) and enjoy!

Notes

Control the spice level by using a mild, medium, or hot buffalo wing sauce. Add a pinch of cayenne pepper for extra heat. Cook the chicken and base ahead of time for a quicker meal. Store separately in the fridge. For an extra creamy sauce, add a tablespoon of cream cheese to the buffalo sauce mixture. Consider a Mediterranean, Mexican Fiesta, or Asian-inspired twist by changing the base and toppings.
