- In a bowl, toss the chicken pieces with olive oil, minced garlic, Italian seasoning, paprika, red pepper flakes (if using), salt, and pepper.
- Heat a large skillet over medium-high heat.
- Add the seasoned chicken and cook until cooked through and lightly browned, about 5-7 minutes. Cook in batches if necessary to avoid overcrowding.
- Lightly warm the tortillas in a dry skillet or microwave for a few seconds to make them more pliable (optional).
- Lay a tortilla flat on a clean surface.
- Sprinkle mozzarella cheese, cheddar cheese, and Parmesan cheese evenly over the tortilla, leaving a small border around the edge.
- Spread the cooked garlic chicken over the cheese layer.
- Add another sprinkle of mozzarella, cheddar, and Parmesan cheese on top of the chicken.
- Fold in the sides of the tortilla, then tightly roll it up from the bottom.
- In a small bowl, combine the melted butter and minced garlic.
- Brush the outside of each wrap with the garlic butter.
- Heat a large skillet over medium heat.
- Place the wraps in the skillet, seam-side down, and cook for 2-3 minutes per side, or until golden brown and crispy, and the cheese is melted.
- Keep warm in a preheated oven (200°F) until ready to serve (optional).
Notes
Don't overcook the chicken. Feel free to experiment with different types of cheese. Pepper jack cheese adds spice, while provolone or Monterey Jack are good alternatives. For the garlic butter, add a pinch of dried parsley, oregano, or garlic powder. A squeeze of lemon juice will add a bright, zesty flavor. To make the wraps spicier, add cayenne pepper to the chicken seasoning or use pepper jack cheese. Add chopped vegetables for extra nutrition.
