  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt to taste
  • Pepper to taste
  • 8 oz Monterey Jack cheese, shredded
  • Optional: Fresh parsley or green onions for garnish

Method
 

  1. Preheat oven broiler on low (optional).
  2. Pat chicken breasts dry with paper towels and season with garlic powder, onion powder, paprika, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add chicken breasts to the skillet and sear for 4-5 minutes per side, until golden brown and cooked through (internal temperature of 165°F/74°C).
  5. Remove skillet from heat and sprinkle shredded Monterey Jack cheese over each chicken breast.
  6. Broil in the oven for 1-2 minutes, or until cheese is melted and bubbly. Alternatively, cover the skillet with a lid and let the residual heat melt the cheese.
  7. Garnish with fresh parsley or green onions.
  8. Serve immediately and enjoy!

Notes

Don't overcook the chicken; use a meat thermometer to ensure it reaches 165°F (74°C). Shred your own cheese for best melting. For variations, add cayenne pepper for spice, sauté bell peppers and onions before adding chicken, use different cheeses like cheddar or Colby Jack, stir in sour cream or cream cheese for creaminess, or add a sauce like BBQ or ranch. Leftovers can be stored in the refrigerator for up to 3-4 days and reheated in the microwave or oven.
