  • 1 pound ground beef 80/20 or 85/15
  • 2 tablespoons soy sauce
  • 2 tablespoons gochujang Korean chili paste
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes optional, for extra heat
  • 1/4 cup water
  • Cooked rice
  • Green onions, chopped for topping
  • Sesame seeds for topping
  • Sriracha mayo for topping
  • Fried egg optional, for topping

Method
 

  1. Prepare the Beef: In a large skillet or wok, brown the ground beef over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Build the Flavor Base: Add the soy sauce, gochujang, brown sugar, sesame oil, garlic, ginger, and red pepper flakes (if using) to the skillet. Stir well to combine with the beef.
  3. Simmer and Thicken: Add the water and bring the mixture to a simmer. Reduce the heat to medium-low and cook for 5-7 minutes, or until the sauce has thickened slightly and the beef is coated in the sauce. Stir occasionally to prevent sticking.
  4. Assemble the Bowls: Divide the cooked rice among bowls. Top with the Korean ground beef.
  5. Add Toppings: Garnish with your favorite toppings, such as green onions, sesame seeds, kimchi, and a drizzle of sriracha mayo. A fried egg on top is also a fantastic addition!

Notes

For a richer flavor, use 80/20 or 85/15 ground beef. Adjust the amount of red pepper flakes to your spice preference. Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, microwave until heated through.
