Easy Philly Cheesesteak Roll Ups

Ingredients
  

  • 1 pound thinly sliced steak Ribeye or sirloin
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 bell pepper green
  • 8 ounces sliced mushrooms optional
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces provolone cheese, sliced
  • 1 large egg, beaten
  • Optional: Sesame seeds or everything bagel seasoning, for topping
  • 1 tablespoon water

Method
 

  1. Heat the olive oil in a large skillet or griddle over medium-high heat. Add the thinly sliced steak and cook, stirring frequently, until browned and cooked through, about 5-7 minutes. Cook in batches if necessary.
  2. Remove the steak from the skillet and set aside. In the same skillet, add the sliced onion and bell pepper (and mushrooms, if using). Cook, stirring occasionally, until the vegetables are softened and slightly caramelized, about 8-10 minutes.
  3. Add the minced garlic and cook for another minute, until fragrant.
  4. Stir in the Worcestershire sauce, salt, and pepper. Return the cooked steak to the skillet and combine well with the vegetables. Reduce heat to low and keep warm.
  5. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  6. Lightly flour a clean work surface. Unfold one sheet of puff pastry.
  7. Evenly spread half of the steak and vegetable mixture over the puff pastry, leaving a small border around the edges. Top with provolone cheese slices.
  8. Carefully roll up the puff pastry tightly, starting from one end. Pinch the seam to seal.
  9. Repeat with the remaining puff pastry sheet, steak mixture, and cheese.
  10. Using a sharp knife, slice each roll into 1-inch thick slices. Place the slices, cut-side up, on the prepared baking sheet, leaving a little space between each one.
  11. In a small bowl, whisk together the egg and a tablespoon of water to create an egg wash. Brush the tops of the roll ups with the egg wash.
  12. If desired, sprinkle the tops of the roll ups with sesame seeds or everything bagel seasoning.
  13. Bake for 15-20 minutes, or until the puff pastry is golden brown and puffed up.
  14. Let the roll ups cool slightly on the baking sheet before serving. Serve warm.

Notes

Don’t overfill the roll ups to prevent bursting during baking. Chill the puff pastry if it gets too warm. Get creative with cheese variations like white American, mozzarella, or sharp cheddar. You can assemble the roll ups ahead of time and store them in the refrigerator for up to 24 hours before baking. Add red pepper flakes for a little heat. Serve with marinara sauce, cheese sauce, or spicy mayo for dipping. For leftovers, store cooled roll ups in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 5-10 minutes.
