Easy Spinach Lasagna Roll Ups

These easy spinach lasagna roll ups are a delicious and less messy alternative to traditional lasagna. Filled with a creamy spinach and ricotta mixture, these roll ups are topped with marinara sauce and mozzarella cheese, then baked to bubbly perfection.

Ingredients
  

  • 12 lasagna noodles
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 egg, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 24 ounces marinara sauce
  • 1 1/2 cups shredded mozzarella cheese

Method
 

  1. Preheat oven to 375°F (190°C). Spread 1 cup of marinara sauce in the bottom of a 9x13 inch baking dish.
  2. Cook lasagna noodles according to package directions. Drain and rinse with cold water. Lay flat on a clean kitchen towel to prevent sticking.
  3. In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. In a large bowl, combine spinach, ricotta cheese, Parmesan cheese, basil, egg, salt, and pepper. Add the cooked onion and garlic to the spinach mixture. Stir well to combine.
  5. Spread about 1/3 cup of the spinach mixture evenly over each lasagna noodle. Roll up tightly and place seam-side down in the prepared baking dish, seam-side down.
  6. Pour the remaining marinara sauce over the roll ups.
  7. Sprinkle with mozzarella cheese.
  8. Bake for 25-30 minutes, or until heated through and the cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.

Notes

For best results, ensure the spinach is thoroughly squeezed dry to prevent a watery filling. You can use a high-quality store-bought marinara sauce or make your own. Store leftovers in the refrigerator for up to 3 days. Reheat in the oven or microwave. For a richer flavor, consider adding a pinch of red pepper flakes to the marinara sauce.
