Keto Philly Cheesesteak Roll-Ups

Ingredients
  

  • 8 oz Cream Cheese, softened
  • 2 Large Eggs
  • 1 cup Shredded Mozzarella Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • Salt and Pepper to taste
  • 1 lb Thinly Sliced Steak Ribeye or sirloin
  • 1 tbsp Olive Oil
  • 1 Medium Onion, thinly sliced
  • 1 Green Bell Pepper, thinly sliced optional
  • 4 oz Sliced Provolone Cheese
  • Chopped Parsley for garnish optional
  • Keto-Friendly Dipping Sauce optional

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat together softened cream cheese and eggs until smooth.
  3. Stir in mozzarella cheese, parmesan cheese, garlic powder, onion powder, salt, and pepper until well combined. The mixture will be thick.
  4. Spread the cream cheese mixture evenly onto the prepared baking sheet, forming a thin rectangle (about 12x16 inches).
  5. Bake for 15-20 minutes, or until the dough is golden brown and set.
  6. Remove from the oven and let it cool completely on the baking sheet.
  7. Heat olive oil in a large skillet over medium-high heat. Add thinly sliced steak and cook until browned and cooked through. Season with salt and pepper. Remove steak from the skillet and set aside.
  8. In the same skillet, add sliced onion and bell pepper (if using) and cook until softened and slightly caramelized. Season with salt and pepper.
  9. Add the cooked steak back to the skillet with the onions and peppers. Mix well.
  10. Once the baked dough is completely cooled, carefully flip it onto another piece of parchment paper.
  11. Lay the provolone cheese slices evenly over the dough.
  12. Spread the steak and vegetable mixture evenly over the provolone cheese.
  13. Starting from one end, carefully roll up the dough tightly, like a jelly roll.
  14. Using a sharp knife, slice the roll into 1-inch thick slices.
  15. If desired, place the roll-ups on a baking sheet and broil for a minute or two until the cheese is melted and bubbly. Watch them closely to prevent burning.
  16. Garnish with chopped parsley (if desired) and serve immediately with your favorite keto-friendly dipping sauce.

Notes

If the dough is too wet, add a tablespoon or two of almond flour. If the dough is cracking when rolling, let it sit at room temperature for a few minutes or gently warm it in the microwave. To prevent roll-ups from falling apart, roll the dough tightly and use a toothpick to secure the seam if needed. The roll-ups can be prepared ahead of time and stored in the refrigerator. Spice it up by adding red pepper flakes to the filling or customize the cheese with cheddar, Monterey Jack, or pepper jack. Add sautéed sliced mushrooms for extra flavor. For variations, try pizza roll-ups, buffalo chicken roll-ups, or spinach and artichoke roll-ups.
