- Preheat your oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the chopped onion and green bell pepper to the skillet and cook until softened, about 5-7 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, yellow mustard, garlic powder, salt, and pepper.
- Bring the mixture to a simmer and cook for 10-15 minutes, stirring occasionally, allowing the flavors to meld together.
- Pour the Sloppy Joe mixture into a 9x13 inch baking dish. Spread it evenly across the bottom.
- Open the can of refrigerated biscuit dough and arrange the biscuits evenly over the Sloppy Joe filling. Slightly overlap the biscuits if needed to cover the entire surface.
- In a small bowl, combine the melted butter and parsley (if using). Brush the tops of the biscuits with the melted butter mixture.
- Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and cooked through. The internal temperature of the biscuits should reach at least 200°F (93°C).
- Let the casserole cool for a few minutes before serving.
Notes
For a spicier casserole, add red pepper flakes or hot sauce to the Sloppy Joe mixture. Shredded cheddar cheese can be sprinkled over the biscuits during the last 5 minutes of baking. The Sloppy Joe filling can be prepared ahead of time and stored in the refrigerator for up to 2 days. Store leftover casserole in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or the entire casserole in the oven at 350°F (175°C) until warmed through. Cover with foil to prevent the biscuits from drying out. Substitute ground turkey for ground beef for a leaner option. For a vegetarian version, use a plant-based ground meat substitute or a combination of lentils and chopped vegetables. Add a tablespoon of apple cider vinegar and a pinch of cinnamon to the Sloppy Joe mixture for a sweet and tangy twist.
