Ingredients
  

  • 3 medium sweet potatoes, peeled and diced into 1-inch pieces
  • 1 lb green beans, ends trimmed
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • salt and freshly ground pepper, to taste
  • 1 tbsp freshly squeezed lemon juice
  • 0.25 cup grated Parmesan cheese (optional)

Method
 

  1. Preheat your oven to $425^{circ}text{F}$ ($220^{circ}text{C}$).
  2. In a large bowl, combine the diced sweet potatoes and trimmed green beans. Pour the olive oil over the vegetables. Add the garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Mix thoroughly until all the vegetables are well coated with the seasoning. Transfer the mixture onto a large baking sheet, ensuring the vegetables are spread out in an even, single layer.
  4. Place the tray in the oven and roast for about 25–30 minutes, or until the sweet potatoes are soft and golden, stirring the vegetables halfway through to ensure even roasting.
  5. Once done, take the tray out of the oven and drizzle with the fresh lemon juice. If desired, finish with a sprinkle of Parmesan cheese before serving.

Notes

Ensure vegetables are spread in an even, single layer for maximum crispness. Stirring halfway through is key for even browning. Fresh green beans are recommended over frozen. For a heartier meal, add 1 cup of cooked chickpeas or shredded rotisserie chicken before roasting.
