Ingredients
  

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup BBQ sauce
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 pounds Yukon Gold or red potatoes, peeled and cubed
  • 4-5 cloves garlic, minced
  • 4 tablespoons butter
  • 1/4 cup milk or cream
  • 2 tablespoons fresh parsley, chopped

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Pat chicken dry and season with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. In a bowl, whisk together BBQ sauce, honey, and apple cider vinegar.
  4. Place chicken in a baking dish and pour half of the honey BBQ sauce over the chicken, reserving the other half.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  6. Optional: Broil the chicken for the last 2-3 minutes for extra caramelization, watching carefully.
  7. Let the chicken rest for 5 minutes before serving. Drizzle with the remaining honey BBQ sauce.
  8. Place cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 12-15 minutes.
  9. Drain the potatoes well and return them to the pot.
  10. Add the butter and minced garlic to the potatoes. Mash until the butter is melted and the garlic is fragrant.
  11. Gradually add the milk or cream, mashing until the potatoes are smooth and creamy.
  12. Season with salt and pepper to taste.
  13. Garnish with fresh parsley and serve alongside the Honey BBQ Chicken.

Notes

Don't overcook the chicken; use a meat thermometer. Use a BBQ sauce you love. For roasted potatoes, toss with olive oil, garlic, and herbs, and roast at 400°F (200°C) for 20-25 minutes. Add cheese to the potatoes for extra indulgence. Spice it up with red pepper flakes. Chicken can be marinated for up to 24 hours. Potatoes can be boiled and mashed ahead of time. Store leftovers in the refrigerator for up to 3-4 days.
